At FatCat Scones (916/372-6464), they've created a freezer-to-oven scone that has added appeal as a ready-to-bake item.
"People want something easy and quick, and that is what is appealing about our scones," says Erik Finnerty, co-owner. "You can bake one or two or a dozen at a time." FatCat Scones are sold in packages of pre-portioned dough, and they take approximately 15-18 minutes to bake, depending on the oven. These are NOT your average scones. Instead, they are round and moist, and have a longer shelf life (a couple of days) than their drier counterparts. So what about the berries? With 15 different varieties, many of which are fruit-based, Wild Blueberry and Mandarin Orange Cranberry seem to top the list of the berry scones. Each is accompanied by a fruit glaze for topping the warm scone. Finnerty says everyone loves a fruit-flavored scone, but kids especially like the fruit taste. That's why they're doing business with schools in California and Nevada. "Our scones really meet their needs," he says. "They are looking for credible grains, and these are all-natural with no trans-fat."
